What better way to celebrate the greenest day in the world with some green tea cookies! At the Winter Fancy Food Show this past January, I connected with a green tea matcha company, Aiya - who then sent me a sample of their cooking grade matcha. I incorporated the matcha into my cookie dough like I do my cocoa powder when making chocolate cookies. The dough came out a bit dry, though not unlike the chocolate cookies.
The thing about Green Tea in general is that the taste is pretty subtle, or rather, it can be easily overpowered. Next time, I won't add almond extract to the dough, and especially since the icing usually has a bit of almond extract in it. Will keep the vanilla though - since i read somewhere that vanilla enhances other flavors.
I will definitely do this again! :)
